for boiling:

▢1 tsp salt
▢2 potato / aloo (wedge)

for crispy aloo:

▢¼ tsp turmeric
▢½ tsp chilli powder
▢¼ tsp salt
▢2 tbsp maida
▢2 tbsp corn flour
▢water (for batter)
▢oil (for frying)

for sauce:

▢2 tbsp oil
▢3 clove garlic (sliced)
▢1 inch ginger (chopped)
▢2 tbsp spring onions (chopped)
▢½ onion (petals)
▢½ capsicum (chopped)
▢2 tbsp tomato sauce
▢2 tbsp vinegar
▢2 tbsp soy sauce
▢¼ tsp chilli powder
▢¼ tsp salt
▢¼ tsp pepper powder
▢1 tsp corn flour
▢½ cup water
▢2 tbsp spring onion (chopped)


To make it more engaging and unique, 

Step 1 : Start by boiling a large pot of salted water. 

Step 2 : Once it's boiling, add two potatoes and let it simmer for two minutes. 

Step 3 : Drain the potatoes and then add turmeric, chili powder, and a pinch of salt. 

Step 4 : Mix everything together until the spices are evenly distributed. 

Step 5 : Then, add maida, cornflour, and a little bit of water; blend it until you get a smooth batter. 

Step 6 : Deep fry the mixture in hot oil, stirring occasionally until the potatoes are golden and crisp. 

Step 7 : In a large wok, heat two tablespoons of oil and stir fry garlic, ginger, and spring onions. 

Step 8 : Add onions and capsicum and stir fry them. 

Step 9 : Now, add tomato sauce, vinegar, soy sauce, chili powder, salt, and pepper powder. 

Step 10 : Stir fry on high heat until the sauces are well combined. 

Step 11 : Pour in a cornflour slurry (mix 1 teaspoon of cornflour with half a cup of water) and cook until it turns glossy. 

Step 12 : Finally, add the fried potatoes, spring onions, and mix everything together.

Firstly, ensure you fry the aloo until it's crunchy. Otherwise the chilli aloo will be soggy.
