Beetroot soup can be made without the additional vegetables, but I have added them to add flavour.

I'll admit, I'm not a huge fan of veggie soups, but I'm really taken with this one as it has all the taste of a street food dish. Not to mention the health benefits! I'm sure I wouldn't be so taken with this soup if it was only made with beetroot. But I've added the other vegetables to give it more flavour and a bright colour. Carrots and tomatoes bring sweetness and a hint 
of sourness.

▢1 tsp butter
▢1 bay leaf
▢2 clove garlic
▢1 inch ginger
▢2 shallots (halves)
▢1½ cup beetroot (cubed)
▢1 carrot (cubed)
▢1 tomato (chopped)
▢½ tsp salt
▢2 cup water
▢1 tsp pepper (crushed)
▢cream for garnishing
▢mint for garnishing


Step 1: In a pressure cooker, heat 1 tsp butter and saute 1 bay leaf until aromatic.

Step 2: Sauté 2 cloves of garlic, 1 inch ginger, and 2 shallots until they shrink slightly.

Step 3:  Also, add 1½ cups beetroot, 1 carrot, 1 tomato, and 12 tsp salt.

Step 4: Add 2 cups of water and pressure cook for 3-4 whistles.

Step 5:  Let the water cool completely before draining it off.

Step 6: Blend the pressure cooked vegetables into a smooth paste in a blender.

Step 7: Make a large kadai with the beetroot paste.

Step 8: While cooking vegetables, pour in the water left out.

Step 9: Adjust consistency as necessary after mixing well.

Step 10: Add 1 tsp pepper to the soup once it comes to a boil.

Step 11: Finally, enjoy beetroot soup garnished with mint and cream.


In order to increase nutrition, add vegetables like sweet potato and potato along with beetroot.
Additionally, pressure cooking preserves the nutrition of vegetables.
Alternatively, you can add more cream to make a creamy beetroot soup.
The beetroot soup recipe tastes great when prepared with mixed vegetables.
